Job Title: Executive Chef
Job Summary 
We are currently seeking a highly motivated individual with a passion for creating food of high quality while maintaining company standards.  
Key Tasks
  • Oversee the operations in all kitchens.
  • Organise special events and food promotions.
  • Plan and cost menus.
  • Develop and write standard recipes.
  • Develop new dishes and products.
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.     
  • Maintain a hygienic kitchen.
  • Assist with the development of new product and services.
  • Prepare and manage outlet budgets.
  • Monitor, analyses and report variations from the budget.
  • Develop systems that measure the cost effectiveness of the department.
  • Develop procedures that track, report on, and control the running costs of the department.
  • Develop and monitor, in conjunction with the purchasing manager, the implementation of purchasing procedures.
  • Prepare budgets for purchases, in conjunction with the Purchasing Manager.
  • Purchase stock/ inventory according to purchasing procedures and specification.
  • Coordinate work operations within the department.
  • Develop performance standards for operations in the department.
  • Assess work operations between other departments.
  • Monitor productivity of the department.          
  • Prevent and resolve grievances.
  • Counsel employees and prevent work related problems.
  • Recruitment of vacant positions within department.
  • Approve employee roster before printing.
  • Manage employee training and development using Human Resources Management System.
  • Conduct performance reviews
  • Ensure guest needs and reasonable requests are met.
  • Seek opportunities to continually improve guest service.
  • Establish and maintain effective guest relations.
  • Take appropriate action to resolve guest complaints.
  • All other tasks as directed by the General Manager.
Suitable  Requirements
  • Previous experience as an Executive Chef or above for a minimum period of three years in a similar 5 star resort or hotel.
  • Excellent fluency in both written and spoken English is a must.
  • Ability to lead, manage and motivate the department with the other senior managers.
  • Previous experience working with different nationalities and cultures.
  • Must be highly motivated, positive, creative and enthusiastic.
  • Demonstrate professional attitude and behaviour at all times.
