Emilia-Romagna boasts a deep culinary heritage, with dishes shaped by patience and honed across generations. The region’s most famed dish is tagliatelle al ragù Bolognese, which Uma Cucina pairs with a considered selection of regional Italian wines.
In Campania, the sea sets the rhythm of the kitchen. Inspired by Naples and its coastal traditions, this chapter’s menu highlight is spaghetti alle vongole, a classic of clams, garlic, olive oil, and white wine that brings the spirit of the ocean into Bali’s jungled heart.
This opening chapter brings Tuscany to the table Inspired by the region’s rolling countryside and rustic traditions, dishes include pappardelle al cinghiale with slow-cooked wild boar ragù, thoughtfully paired with a selection of regional wines.
