This opening chapter brings Tuscany to the table Inspired by the region’s rolling countryside and rustic traditions, dishes include pappardelle al cinghiale with slow-cooked wild boar ragù, thoughtfully paired with a selection of regional wines.

Chapter Two: Liguria
Chapter two showcases the coastal landscapes and garden-fresh flavours of Liguria. Savour trofie al pesto Genovese (twisted pasta with fragrant basil pesto, pine nuts and parmesan) alongside a carefully selected wine pairing and traditional sides.
June and July
Chapter Three: Lazio
Chapter three highlights the distinct culinary traditions of Lazio, home to Italy’s vibrant capital city, Rome. The menu is rich with authentically simple Roman flavours, including spaghetti alla carbonara, prepared with eggs, pecorino cheese, guanciale and black pepper.
