About the chef

Melchor Baltasar Aznar brings a brilliant combination of technique, creativity and leadership to COMO The Halkin. Trained in Michelin- and Repsol-level kitchens – including Casa Gerardo, Ametsa with Arzak Instruction, and Wild Honey St James – he joined COMO in 2021 and rose swiftly from Junior Sous Chef to Head Chef.

Aznar has since reshaped the hotel’s culinary identity around craftsmanship, introducing an in-house approach to breads, preserves, sauces and seasonal preparations. His Afternoon Tea concept earned the title of Best Contemporary Afternoon Tea 2024, bringing national attention to COMO The Halkin.
