Le Cordeillan

Le Cordeillan serves contemporary French cuisine rooted in seasonality, local producers, and the nearby Atlantic coast. These influences are reflected in oysters from Arcachon Bay, a signature turbot, and veal from nearby Gironde. Guests can choose from an à la carte menu, a three-course menu for lunch, or four- and six-course dinner tastings, paired with selections from the hotel’s 1,600-label cellar.

An Expression of Place

Chef Fabien Ferré’s culinary direction is guided by the rhythm of the land and sea. Drawing from the Atlantic coastline, Arcachon Bay, and the surrounding vineyards, his cuisine emphasises freshness, texture, and natural expression. Together with Executive Chef Mathieu Martin, Ferré layers flavours and textures into a cohesive dining experience.

Bordeaux and Beyond

Le Cordeillan’s cellar features nearly 1,600 bottles, with a strong emphasis on Château Lynch-Bages and the surrounding Bordeaux terroir, as well as the surrounding regions. Each pairing is curated to complement the seasons, balancing structure, acidity, and depth. 

About the chef

Fabien Ferré

Currently the youngest chef to lead a three-Michelin Star restaurant in Provence, Fabien Ferré is known for expressive, ingredient-led cooking. His approach at Le Cordeillan reflects a deep respect for terroir, combined with a modern sensibility that prioritises balance and precision.
