These influences are reflected in oysters from Arcachon Bay, a signature turbot, and veal from nearby Gironde. Guests can choose from an à la carte menu, a three-course menu for lunch, or four- and six-course dinner tastings, paired with selections from the hotel’s 1,600-label cellar.

Together with Executive Chef Mathieu Martin, Ferré layers flavours and textures into a cohesive dining experience.

Le Cordeillan’s cellar features nearly 1,600 bottles, with a strong emphasis on Château Lynch-Bages and the surrounding Bordeaux terroir, as well as the surrounding regions. Each pairing is curated to complement the seasons, balancing structure, acidity, and depth.
