Combining classic South Tyrolean flavours with Peifer’s Japanese-inspired precision and French technique, the multi-course tasting menu is rooted in a shared respect for seasonality, with each course reflecting the unique identity of both chefs and the traditions that inspire their cooking.

Thomas Fischnaller

Executive Chef of COMO Alpina Dolomites

As Executive Chef of COMO Alpina Dolomites, Thomas Fischnaller celebrates the culinary heritage of South Tyrol through seasonal, locally sourced ingredients and refined contemporary techniques. His menus are inspired by the rhythms of the mountains, showcasing exceptional regional produce while embracing a clean, ingredient-led approach to cooking.

Drawing on close relationships with local farmers, cheesemakers and artisans, Fischnaller creates dishes that reflect both the character of the Dolomites and the changing seasons.

Benjamin Peifer

Chef and co-owner of INTENSE

Benjamin Peifer is the chef and co-owner of Restaurant INTENSE in Wachenheim an der Weinstrasse, Germany, where he and his wife Bettina have earned two Michelin stars. After beginning his professional career as a baker before training as a chef, Peifer received his first Michelin star at the age of 25. In 2025, he was named Chef of the Year by Gault&Millau Germany.

Peifer’s cuisine is rooted in flavour, combining Japanese influences with classical French technique and the culinary traditions of Germany's Palatinate region. Rather than adhering strictly to locality, he believes the quality of an ingredient should always come first.
