Giovanni Luca Di Pirro is the award-winning Executive Chef at COMO Castello del Nero, where he leads the culinary identity of La Torre. Born in Romagna and raised in a family of chefs, he developed a passion for simplicity, precision and ingredient-driven cuisine from an early age. Over the course of his career in Italy, the United Kingdom and France, he has worked alongside a number of notable chefs, further refining his philosophy rooted in Tuscan and Italian produce. His approach is expressed through dishes that balance purity, seasonality and contemporary technique.

A Culinary Journey Across Europe

Chef Giovanni began his apprenticeship at a young age, working in acclaimed kitchens across Italy and France. Under the guidance of experienced masters, he learned the importance of locality, freshness and respectful preparation — foundations that continue to shape his approach at La Torre.

A Deep Connection to Tuscany

Returning to Tuscany in 1999, Chef Giovanni opened his own restaurant in Montalcino before helming the kitchens of a prestigious hotel. In 2012, he joined Castello del Nero and earned La Torre a Michelin star in 2014 with his interpretation of Tuscan cuisine.

Guiding the Estate’s Culinary Vision

Today, Chef Giovanni oversees La Torre as Executive Chef and leads the estate’s Food and Beverage programme, managing Pavilion and La Taverna alongside the Michelin-starred restaurant. His work continues to elevate local ingredients, presenting them with clarity, craftsmanship and contemporary nuance.
