Position: Director of Food and Beverage

Tasks/Responsibilities:
- Provide strategic leadership across all F& B departments, including restaurants, bars, banqueting and events, room service, culinary, and stewarding
- Ensure consistent delivery of COMO service standards and exceptional guest experiences across all dining and beverage operations including La Sirena, Mahmyaa, Room Service/Aqua Bar, etc.
- Oversee day-to-day operational performance, ensuring quality, efficiency, hygiene, and HACCP compliance
- Lead and develop all F&B managers and teams through coaching, training, performance management, and succession planning.
- Drive financial performance through budgeting, forecasting, P&L management, cost control, menu engineering, and revenue optimization.
- Collaborate with Sales, Marketing, and Revenue teams on pricing, promotions, F&B positioning, and annual business planning.
- Maintain strong relationships with owners, partners, visiting COMO managers, and key stakeholders.
- Gather and respond to guest feedback to maintain high satisfaction and continually improve service standards.
- Ensure operational manuals, standards, and procedures are implemented and consistently followed.
- Ensure smooth communication flow between teams, department heads, and senior leadership.
- Safeguard company assets through effective stock control, inventory management, and operational checks.
- Support People & Culture in training, development, well-being, and retention initiatives for F&B teams.
- Stay updated on market trends and competitor insights to keep offerings relevant and competitive.
Key requirements
- Bachelor’s degree in Hospitality, Hotel/Restaurant Management, Business, or a related field; Master’s degree is an advantage.
- 10–15 years of progressive F&B experience with at least 3–5 years in a senior leadership role (Director/Assistant Director of F&B or equivalent).
- Strong business acumen with experience in budgeting, cost control, forecasting, profit and loss reporting, revenue optimization
- Strong leadership skills in developing and mentoring large, diverse teams
- Excellent communication and stakeholder management skills with senior leaders, operational teams, guests, and other stakeholders.
- Experience in luxury or upscale hotels/resorts; pre-opening experience is a plus.
- Passion for food, beverage, service excellence, and industry trends.
- Excellent command of English; additional languages are an advantage.
