Junior Sous Chef

Role:

As a Junior Sous Chef, you will be assisting the Cluster Head Chef and Sous Chef in leading the Kitchen team over breakfast service, room service, and events. In your role, you will be required to carry out your work in accordance with the Hotel policies and within your departmental standard operating procedures. It is expected that your work will be executed in a manner that exceeds expectations.


Responsibilities:

  • Working with the Head Chef to manage daily kitchen activities, including overseeing the team, assisting with menu preparation, ensuring food quality and freshness, and monitoring ordering and stock rotation
  • Ensures quality and consistency by following designated recipes
  • Leads the kitchen brigade in the Head Chef's absence
  • Provides guidance to junior Chefs, including, but not limited, to cooking, food preparation, and plating dishes
  • Oversees and organises kitchen stock and ingredients
  • Ensures a stock rotation system and verifies all food products are properly dated and organised for quality assurance
  • Ensures the fridges are well-stocked, especially before and during prime operation hours
  • Assists with hiring and training new Chefs to the kitchen's standards
  • Manages food and product ordering by keeping detailed records and minimises waste, plus works with existig systems to imporve waste reduction and manage budgetary concerns
  • Supervises all food perparatio and presentation to ensure quality standards
  • Works with the Head Chef to maintain kitchen organisation and high levels of cleanliness and hygiene
  • Assist with planning the Kitchen rota
  • Ensure hygienic and very safe kitchen environment
  • Any other duties that may be assigned by your manager from time to time

Key Requirements:

  • Formal culinary training
  • Previous five-star hotel or fine dining restaurant experience
  • Extensive food and beverage knowledge
  • Strong organisational skills
  • Attention to detail
  • Level 3 Supervising Food Safety Qualification
  • Excellent spoken and written English
  • Strong written & verbal communication skills
  • Leadership
  • Ability to work under pressure
  • Self-motivated
  • Creative problem-solver
