Position: Sushi Chef
Base Location: Parrot Cay
Department: Food and Beverage
Reporting to: Executive Chef
Tasks/Responsibilities:
- Prepare a variety of sushi items, including nigiri, sashimi, maki rolls, and specialty rolls.
- Ensure the freshness, quality, and safety of all fish and seafood products.
- Maintain high standards of food presentation and plating aesthetics.
- Monitor inventory and ensure adequate stock levels for daily operations.
- Maintain a clean, organized, and sanitary work environment, in compliance with health regulations.
- Interact with guests at the sushi counter, offering recommendations and answering questions.
- Train and supervise junior kitchen staff or sushi apprentices when applicable.
- Collaborate with the Head Chef or management on menu planning and specials.
- Stay current on sushi trends, techniques, and ingredients.
- Safely handle and maintain sushi knives and other specialized equipment.
Key requirements
- Proven experience as a Sushi Chef or in a Japanese culinary environment (typically 2 5 years).
- Formal culinary training or sushi chef certification is a plus.
- Deep knowledge of Japanese cuisine, ingredients, and sushi preparation techniques.
- Food safety certification (e.g., Food Handler's Certificate).
- Knife skills and precision in fish cutting and presentation.
- Creativity in dish design and plating.
- Attention to detail and commitment to freshness and quality.
- Strong communication and customer service skills, especially when working at an open sushi bar.
- Time management and ability to multitask during busy service periods.
- Team player with leadership potential.
- Requires long periods of standing and fine motor control for precision work.
- Evening, weekend, and holiday availability is often required.
