Following its successful debut last year, COMO Metropolitan London is thrilled to announce the return of 'A Taste of COMO’ in 2023. From May 4th, guests can indulge in an unparalleled culinary journey showcasing COMO’s innovative cuisine from around the globe. Expect the most sought-after dishes from each pop-up – Taste of Le Mediterranean, Taste of the Ocean and Taste of Le Bistro.

A taste of COMO
Helmed by Executive Head Chef Ruben Briones, guests are invited to experience an exquisite selection of dishes such as the flavourful appetiser of Ras El Hanout marinated roasted aubergine, grilled Galician octopus – Chef Briones’ childhood favourite inspired by the authentic tastes of Spain, and Bourguignon de joue de boeuf – a tantalising slow-cooked red wine ox cheek.

CHEF RUBEN BRIONES
Executive Chef Ruben Briones began cooking in his grandfather’s Andalusian kitchen and his career soon took him to train under one of the founding fathers of nouvelle cuisine, Alain Senderens in Paris. He then moved to London to join Jason Atherton’s flagship restaurant, Pollen Street Social, before joining us at our sister hotel, COMO The Halkin, in Ametsa with Arzak instruction, eventually taking on an Executive Chef role at both COMO hotels in London. Chef Briones’ culinary philosophy focuses on classic techniques alongside the finest produce, varied colours and balanced textures.
