THE RESTAURANT

Où Sont Les Boissons?

From the acclaimed team behind the two Michelin-starred Trivet in Bermondsey, Labombe by Trivet is an evolution - freer, more playful, yet uncompromising in quality.

Labombe by Trivet brings a seamless fusion of fire-led cuisine and a Eurocentric wine list to one of Mayfair's most iconic addresses. An open kitchen and sculptural interiors by Turkish architect Umay Çeviker of Derin Yeşil pay homage to the Met Bar's glamorous legacy, while ushering in a new era: a modern celebration of seasonal food and rare wines, where each is as important as the other.

THE FOOD

Simple ingredients

Under the culinary direction of Head Chef Evan Moore — another Fat Duck Group alumnus — Labombe by Trivet’s kitchen delivers a confident, fire-led menu using impeccable produce,  with dishes designed to be shared.

Extraordinary flavours

Snack plates might include grilled duck heart and cherry skewers, king oyster gildas, and a few Trivet cult-favourites such as the ever-popular hot tongue bun. Starters profile exciting combinations such as sea bass crudo with orange ponzu, anchovy garum and olive oil. From the grill, expect generous, flame-kissed dishes: Ibérico pork chops, aged steaks, whole day boat caught fish and more.
THE WINE AND COCKTAILS

Where every drink is as thoughtfully curated as the food

Labombe by Trivet's expertly assembled wine list is led by Master Sommelier Isa Bal, alongside UK Sommelier of the Year 2024, Philipp Reinstaller. The precise - and refreshingly irreverent - selection champions an extensive range of artisan European producers, from approachable everyday bottles to exceptional rarities such as five-litre magnums of 2021 Schloss Gobelsburg Grüner Veltliner Lamm, and 1997 Brunello di Montalcino Riserva Soldera.

The cocktail menu nods to the Met Bar's glamorous 1990s heyday, with a sharp list of timeless classics and inventive creations - each mixed with the same meticulous care as the food.

THE FOUNDERS

Two legends unite in a new venture

Chef Jonny Lake and Master Sommelier Isa Bal first met while working at Heston Blumenthal's three Michelin-starred The Fat Duck, where they discovered a shared passion for inventive cuisine, remarkable wine, and warm, intelligent hospitality. Together they created Trivet - a fire-led restaurant which gained two Michelin stars in 2024.

Labombe by Trivet is its spirited younger sibling, born of Jonny's childhood vision: a restaurant where the wine is never an afterthought. The idea began with a French school project to dream up a bistro, when his teacher simply asked: ‘Où Sont Les Boissons?' - Where are the drinks? Four decades later, with Isa's visionary palate and deep cellar knowledge, that question is answered with style.
