Job Purpose:

To manage the wine program at nahm, including selecting, purchasig, and serving wines that complement the restaurant's menu. This role involves advising guests on wine, maintaining the wine inventory, and ensuring a high standard of wine service and knowledge among the staff.


Tasks / Responsibilities:

General Responsibilities:

  • Report to work on time, neatly groomed, and in the correct uniform.
  • Assist in administering and communicating pertinent information.

Wine Management

  • Oversee all wine purchase and cost management.
  • Assist members and guests during dinner service with wine recommendations, selections for perfect pairing with their dinner, decanting of wine, and wine service.
  • Responsible for creating PLU, printing menu, and updating the wine list.
  • Ensure that all wine are serve in proper glassware and in proper condition.
  • Promote wine events.
  • Contact suppliers and inform the management team of any inquiries.
  • Develop wine list and wine pairings according to the menu.
  • Keep the assistant manager informed of all operational issues.
  • Record and send daily par bar reports via email to all concerned parties.
  • Responsible of the inventory and the monthly inventory.
  • Ensure correct charges have been posted to the correct bill when using Micros.


Customer Interaction:

  • Learn by heart the potential allergens in our food and drinks.
  • Describe and recommend food and beverage to customers.
  • Explain how various menu items are prepared, including describing ingredients and cooking methods.
  • Bring wine selections to tables with appropriate glasses, and pour wine for customers.
  • Upsell additional drinks and wine as needed.
  • Check customer satisfaction to ensure they are enjoying their meals and report any issues to the management.


Training:

  • Train team members to maximize their understanding of wine and proper service techniques, including glassware, pour levels, beverage pairings, and the ability to understand guest preferences.
  • Attend required training courses in F&B and other department required.


General:

  • Ensure individual style, working practices, and conduct align with COMO's Mission, Vision and Values.
  • Enhances team morale and spirit by cultivating strong relationships with hotel colleagues.
  • Undertakes any additional tasks as instructed by the superior.
  • Acquainted thoroughly with all health and safety, fire, and emergency procedures.
  • Adheres to high standards of personal hygiene, attire, uniform, and body language.
  • Remains courteous and professional in all situations that reflect on the hotel's reputation.
  • Attends meetings and training sessions as required by the superior.
  • Actively participates in and supports the hotel's sustainable practices, contributes and initiatives.
  • Ensures that all activities are conducted with honesty, integrity, and in line with Thai law.

Performance Evaluation Criteria:

  • Meet monthly revenue goals. Propose and follow up on new projects.
  • Ensure the wine stock, service runs smoothly, adhere to LQA standards and COMO values.
  • Share knowledge through training.
  • Facilitate clear communication and coordination within nahm, with other departments, and with guests.
